The position of FUJIYA1935
After starting FUJIYA1935 and with the passing of time, there have been many things that I want to convey to my guests. Yet at the same time, the question of whether I have truly reached the hearts of my guests is one that I find myself pondering frequently.
Cooking and culinary techniques change almost daily. However, one thing that consistently remains the same and does not change is the desire to use seasonal ingredients to create food that will evoke beautiful memories. This is a concept which I give serious thought to, wish to embody in the cuisine I create, and communicate clearly to guests.
From long ago, in places such as Europe or Asia, it has been thought that people and the earth were connected. Oedipus, from Greek mythology, was said to have been “born from the earth”, and similarly in Asia it has been said that “you are what you eat”. The concept is that food and the environment are connected to the body and that everything in nature is inseparable from each other.
What needs to change is how food is created and distributed.
It is my belief that we as a society must move away from a mass-produced, mass-consumer style of living, and move towards a more humane and natural lifestyle.
I am firmly convinced that the health of planet earth starts with our own bodies.
