After starting FUJIYA1935 and with the passing of time, there have been many things that I want to convey to my guests.
Yet at the same time, the question of whether I have truly reached the hearts of my guests is one that I find myself pondering frequently.
Cooking and culinary techniques change almost daily.
However, one thing that consistently remains the same and does not change is the desire to use seasonal ingredients to
create food that will evoke beautiful memories.
This is a concept which I give serious thought to, wish to embody in the cuisine I create, and communicate clearly to guests.
